Sweet & Sour Pineapple Ham This recipe from the One-Dish Meals book features rice topped with cubes of ham, juicy pieces of pineapple and green pepper in a sweet and sour sauce.
1 1/3 cups each of instant rice and water
2 cups cubed cooked ham
1 cup green pepper (cut into 3/4” squares)
2 tablespoons cornstarch
3 tablespoons each of brown sugar and vinegar
1 tablespoon soy sauce
2/3 cup syrup from pineapple (add water if needed)
1 cup pineapple chunks
In a 2-quart microwave dish (6” x 10”), combine rice and water. Arrange ham around edge, and green pepper beside the ham on the inside.
In a 2-cup microwave-safe measure or bow, mix cornstarch, brown sugar, vinegar, soy sauce and pineapple syrup. Cook at high power 2 minutes or until thickened, stirring often. Add pineapple chunks. If too thick, add some water. Pour over ham. Cover with an indentical dish, inverted, and heat at high power 3 minutes.
