Cream Soup

Quick & Easy Cream Soup (use instead of canned)
When a recipe calls for a can of cream of mushroom (celery, cheese, or chicken) soup, and you don’t have such a product in the cupboard, or you prefer to make your own, here’s the recipe. It is one of the helpful extras in the
One-Dish Meals book.

Canned Cream Soup Substitute
Makes: 1 1/4 cups
2 tablespoons butter or margarine
2 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/4 cups milk (fresh or reconstituted)
In a 1-quart microwave-safe casserole, heat butter at high power 30 seconds or until melted. Blend in flour, salt and pepper. Gradually stir in milk. Cook at high power 3 minutes or until thickened, stirring often.

Cream Of Cheese: After cooking, and while still hot, add 1 cup shredded cheddar cheese; stir until melted.
