Buttercup Squash

 Local Buttercup Squash As Easy As....
1. Cut in half;  place squash halves on a microwave safe tray or pie plate and heat at high power 15 minutes or until flesh is soft and can be easily scooped out of the shell with a spoon.


2. In a bowl, mash the squash and, if desired, add salt, pepper, and butter to taste; mash some more then put scoops of the squash on a cookie sheet and freeze.

3. Wrap one or more of the frozen scoops in sheets of waxed paper; put in a plastic freezer bag; label and store until they are needed for dinners and can be quickly reheated in the microwave.

Cooking time for squash varies; heat it on high power until the skin looks shiny, then check the flesh for doneness...it will appear soft, just the way you’d like it when you enjoy it with a meal.
